Healthy Buffalo Chicken Cucumber Bites
Buffalo Chicken Dip Cucumber Bites are my go-to snack whenever I have leftover buffalo chicken dip in the fridge. They double as excellent appetizers and are frickin delicious. Best of all, they’re light, healthy and ready in under 15 minutes. Total win!

The spicy, tangy buffalo chicken paired with cool, crunchy cucumber is an unbeatable combination. I especially love making these in the summer, when a hot slow cooker full of buffalo chicken dip feels less appealing and better saved for colder months. They’re light yet surprisingly filling, making them perfect for warm weather snacking!
While I usually slice cucumbers into rounds and scoop buffalo chicken on top, tehre are plenty of other ways to serve them. Cut cucumbers in half lengthwise to make buffalo chicken cucumber boats, similar to zucchini boats. Or, peel long strips of cucumber and roll the chicken inside for buffalo chicken cucumber rolls. However you serve them, they’re always delicious!
