Leftover roasted lamb is one of those ingredients that somehow tastes even better the next day. The meat becomes deeply savory, and when chopped and quickly sautéed with garlic, oregano, and lemon, it transforms into the perfect filling for tacos. These lamb tacos balance tender lamb with creamy tzatziki sauce, fresh vegetables, and warm tortillas for a meal that feels both comforting and exotic.
The flavor combination leans Mediterranean or Greek rather than traditional Tex-Mex. The lamb is gently cooked with olive oil, garlic, oregano, salt, pepper, and a splash of lemon juice. Then everything gets tucked into toasted tortillas and topped with cucumber, tomato, and red onion. The real star is the cool tzatziki.
