Ingredients

For the Lamb Taco Meat

  • 2 cups roasted lamb, chopped into small pieces
    (can substitute ground lamb or raw chopped lamb, but increase cooking time)
  • 1 tablespoon olive oil
  • 3 garlic cloves, chopped
  • 1 teaspoon fresh oregano or ½ teaspoon dried oregano
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • ½ cup grated cucumber
  • ¼ teaspoon salt
  • 1 teaspoon olive oil
  • 1 to 2 garlic cloves, finely chopped
  • 1 tablespoon lemon juice
  • ½ teaspoon fresh oregano or ¼ teaspoon dried oregano

Taco Toppings

  • ½ cup diced cucumber
  • ½ cup diced tomato
  • ¼ cup diced red onion
  • 2 tablespoons chopped fresh mint (for garnish)
  • Feta cheese, optional

For the Tacos

  • 8 corn tortillas, flour tortillas, or small pita breads
  • Lemon wedges (optional)

Prep / Mise En Place

  • Chop roasted lamb into small bite-size pieces.
  • Chop garlic and oregano if using fresh.
  • Dice cucumber, tomato, and red onion for toppings.
  • Grate cucumber for tzatziki and lightly squeeze out excess water if very watery.
  • Chop fresh mint.

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped garlic and sauté for about 30 seconds until fragrant. Add the chopped roasted lamb, oregano, salt, and pepper.
  3. Cook for 4 to 6 minutes, stirring occasionally, until the lamb is heated through and slightly crisp on the edges. Add lemon juice and cook for another minute. Remove from heat and set aside. 
  4. If using raw chopped lamb or ground lamb, cook for about 8 to 10 minutes until fully cooked and tender.
  5. In a bowl combine Greek yogurt, grated cucumber, salt, olive oil, chopped garlic, lemon juice, and oregano. Mix well until smooth. Taste and adjust salt or lemon if needed. Refrigerate until ready to serve.
  6. Warm a skillet over medium heat. Toast tortillas one at a time for about 20 to 30 seconds per side until warm and lightly charred in spots. Keep them wrapped in a towel to stay warm.
  7. Place a portion of warm lamb onto each tortilla. Top with diced tomato, diced cucumber, and diced red onion. Add a generous spoonful of tzatziki sauce.
  8. Garnish with chopped mint and optional feta cheese. Serve with lemon wedges on the side if desired.

  • Serve with Greek lemon potatoes or roasted potatoes.
  • Add a simple Mediterranean salad with olives and tomatoes.
  • Pair with grilled vegetables like zucchini or eggplant.
