Ingredients

  • 2–3 lbs cooked, shredded chicken (thighs recommended for juiciness)
  • 6 cups chicken stock
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 can (14 oz) crushed tomatoes or Rotel for extra spiciness
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 large onion, diced
  • 4 cloves fresh garlic, minced
  • 3 jalapenos sliced (half for saute, half for topping)
  • 2 tablespoon olive oil
  • 2 tablespoons masa flour (masa harina) or 2-3 torn corn tortillas
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon Mexican oregano
  • 1 tablespoon vinegar (apple cider or white)
  • Optional: ½ cup heavy cream (for richer soup)
  • Toppings:

Prep / Mise en Place

  • Prepare cooked chicken using your preferred method: poaching, baking, slow cooker, Instant Pot, or rotisserie.
  • Boneless, skinless thighs are juicier; breasts work, but reduce cooking time slightly.

  • This is a great make ahead soup, flavors improve if made a few hours in advance.

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onions, minced garlic, and half the sliced jalapeños. Cook, stirring occasionally, for 5 – 7 minutes until tender and fragrant.
  2. Sprinkle in chili powder, cumin, and Mexican oregano. Cook and stir for 3 minutes to lightly toast the spices.
  3. Stir in chopped chipotle peppers and sauté briefly for 1 – 2 minutes to release their smoky flavor. Transfer the mixture to a slow cooker. 
  4. Alternatively, for a dump-and-leave recipe – add all ingredients from steps 1 – 3 directly into the slow cooker.
  5. Mix in crushed tomatoes, corn, and black beans. Stir to combine.
  6. Add shredded chicken, chicken stock, and masa harina or torn tortillas. Stir to combine. Add vinegar and season with salt and pepper.
  7. Cover and cook on LOW for 4 – 5 hours, allowing flavors to blend and the soup to thicken. 
  8. If using heavy cream, stir it in 30 – 40 minutes before the end of cooking for extra richness.
  9. Ladle soup into bowls and top with the remaining sliced jalapeños, crispy tortilla strips, avocado, sour cream, and fresh cilantro.
