Cheesy and Spicy Buffalo Chicken Quesadilla
Buffalo Chicken Quesadilla is an indulgent yet effortless dish. While a regular quesadilla can feel simple with just a tortilla and melted cheese, adding buffalo chicken brings a burst of flavor from the sharp, tangy hot sauce. It cuts through the richness of the cheese and elevates the quesadilla to another level. Cut into triangles or wedges, they become perfect appetizers or finger foods.

For a quick version, mix the buffalo chicken filling in advance or use premade buffalo chicken dip. Spoon some chicken onto a tortilla, add cheese, and cook on a hot skillet until the tortilla is golden and crispy and the cheese melts perfectly inside. You can also add toppings like chives, shallots, or cilantro for a pop of color. Serve with sour cream for dipping – it’s irresistible!
Cheese selection is key to a great quesadilla. Choose cheeses that are both flavorful and melty; a blend of sharp cheddar and mozzarella is my favorite. Monterey Jack or Pepper jack can add unique flavor twists, and crumbled blue cheese adds tang that complements the buffalo chicken perfectly. To make the quesadilla healthier, consider adding vegetables such as bell peppers, red onions, or spinach for extra color, flavor, and nutrients.

How to Make Buffalo Chicken Quesadilla
These buffalo chicken quesadillas are crispy on the outside, creamy and cheesy on the inside, and full of bold flavor. Using leftover buffalo chicken dip makes them incredibly quick, while a blend of cheddar and mozzarella guarantees the perfect melt.
Ingredients
- 1 to 1½ cups buffalo chicken dip
- 4 medium flour tortillas
- ½ cup shredded mozzarella cheese
- ½ cup shredded sharp cheddar cheese
- 1 to 2 tablespoons chopped fresh chives
- Sour cream, for dipping

Prep / Mise En Place
- Shred mozzarella and cheddar if needed.
- Chop chives.
- Measure out buffalo chicken dip and allow it to soften slightly at room temperature for easier spreading.
Instructions
- Place a large skillet over medium heat. No oil is necessary if using a nonstick pan.
- Lay one tortilla flat. Spread a thin, even layer of buffalo chicken dip over half the tortilla. Sprinkle with mozzarella and cheddar, then add a small amount of chopped chives. Fold the tortilla in half to enclose the filling.
- Place the folded tortilla in the hot skillet. Cook for 2 to 3 minutes per side, pressing gently with a spatula, until the outside is golden and crisp and the cheese inside is fully melted.
- Transfer to a cutting board and let rest for 1 minute. Slice into wedges. Repeat with remaining tortillas.
- Serve warm with sour cream for dipping.
